Tomato, Basil soup

Serves- 4

Ingredients:

6 medium Tomatoes

1 large Carrot (chopped)

2 medium Onions (chopped)

½ tsp Garlic (crushed)

½ cup fresh Basil Leaves

2 cups Water

1 tablespoon Olive Oil, salt to taste

Method:

1. Cut tomatoes in half. Place in baking tray , skin side down. Drizzle with olive oil and salt and place in hot oven(220 degrees) until skin is wrinkled and beginning to char. Remove and cool.

2. Peel skin. Place tomatoes, carrot, onions, garlic, salt and water in a pressure cooker and cook for 2 whistles.

3. When cool, blend the soup and strain it.

4. Reheat and add finely chopped Basil.

5. Adjust seasoning, serve hot.
