Healthy Iron rich Spinach Soup

SERVES-2
Ingredients:
1 cup Spinach (blanched and pureed)
1 cup Milk
1 tsp Butter
¼ Onion (finely chopped)
½ tsp Ginger juice
1 tsp Cornflour
Salt to taste
Ground black pepper(optional)
Method:
1. Heat butter gently and add the onion. Saute until translucent.
2. Add pureed spinach and ginger juice and stir.
3. Whisk cornflour into cold milk and add to saucepan.
4. Keep stirring on gentle heat until soup starts simmering. Let simmer for 2-3 minutes.
5. Cool slightly and add salt to taste.
6. Serve hot.
