Daal Poha

Serves: 2



Ingredients:

1 Cup Moong daal split, soaked for 1 hr


¾ cup Mixed Vegetables (Peas, Cauliflower, Beans, Carrot, Capsicum)( boiled/sautéed)


1/2 Cup Onion, finely chopped


½ cup Tomato, finely chopped


1 Green chilli, finely chopped, optional


1/2 Tsp Ginger, finely chopped


1/4 Cup Coriander Leaves


5-7 Curry Leaves, finely chopped


a pinch sugar


½ tsp cooking oil



Spices:

½ tsp Black Mustard Seeds


¼ tsp Red Chilli Powder, optional


¼ tsp Turmeric, optional


Salt to taste



Method:

1. Boil vegetables in a small bowl with 1 1/2 cups of water, a pinch of sugar and salt to taste.


2. Wash daal and add 2 cups of water and salt to it and boil it, till done.


3. Heat oil in pan, add mustard seeds and allow them splutter.


4. Add ginger and green chilli and cook for about 1 minute.


5. Add remaining ingredients including curry leaves and sauté for 2-3 minutes.


6. Add daal and vegetables and mix well.


7. Add coriander leaves, onion and tomatoes.


8. Serve hot garnished with curry leaves.
